Monterey Chicken

YUMMMMM! This is another recipe I found on recipezaar.com. It is butter, garlic, and cheese all in one, so of course we love it!!! I did find this recipe a little more difficult to do, just because I tend to make “throw it all in a pan” recipes. Trust me though, this chicken is worth the little extra work it takes!!! I obviously had a lot of the cheese melt out of the chicken… I think next time I will try to secure them with toothpicks and see if that helps! I also tend to add more than a “dash” of garlic because we love it!

INGREDIENTS:

  • 8 Boneless skinless chicken breasts
  • 1 8 oz package monterey jack cheese
BUTTER SAUCE:
  • 1/2 cup margarine or butter melted
  • dash of garlic salt
  • parsley
BREADCRUMBS:
  • 1 cup breadcrumbs
  • 1 cup grated parmesan cheese
  • 1 dash garlic salt
DIRECTIONS:
  1. Pound chicken breasts flat ( I put them between sheets of was paper and this helps keep the chicken from tearing)
  2. Slice Monterey Jack cheese about 1/4″ thick, roll chicken around cheese
  3. Dip chicken in butter sauce, then in breadcrumb combination
  4. Place seam side down in a 9×13 baking dish
  5. Bake covered for 30 minutes at 350 degrees
  6. Bake uncovered for an additional 15 minutes or more until browned
** Note: For thicker chicken breasts you may have to adjust cooking time. You could also broil the chicken uncovered for about 5 minutes to crisp it up
